I was so excited to hear from Ryan Wilcox of You Look Nice Today Photography and see his work, and I'm thrilled to get to share it with you today. He sent over these sweet engagement photos of Julie and Dan, and in addition to adoring his photography, you know how much I love a red balloon! "When I first met Dan and Julie they screamed to me everything I love about my home city of Portland, Oregon. They are totally hip, fun, and a little quirky. So for their photo session I chose the industrial district of south east Portland and when Julie showed up with a big red balloon I knew they would be one of my favorite couples that I've ever had the privilege of shooting. Looking at the photos now I really feel that we were able to capture their unique personalities and indie rock style. I seriously HEART this couple."

As of Saturday, we are officially one week away from our wedding. Everyone keeps asking if I'm excited, and I am, but I'll tell you this: my to-do list has 21 things on it, I'm about to go drop off a check for more than $1000 big bucks and I lost one of the earrings I planned to wear in the wedding.
I'm most excited when I read through our ceremony for the billionth time (one of the readings really, really gets me) and really REALLY excited when I look at our guest list. I can't imagine what it will feel like to have everyone I love in the same room, dancing and eating cupcakes. I hope I'll be a sponge and just soak it all up. It hasn't even happened yet, and I'm already nostalgic!
Sean is going on a man trip this weekend with his groomsmen, and I'm staying home to tackle my mile-long to-do list, which includes but is not limited to:
Want to know how I spent my downtime this weekend? Setting and beating scores on Snood! Do you remember Snood? I was obsessed my freshman year of college. This week, Jack Donaghy said he was drinking whiskey and playing Snood on 30 Rock and that was all the reminder I needed. I promptly downloaded the game and have been reliving 2002 for the past two days. For some reason, I was having trouble typing, so you might notice I'm setting my records as "mberAAmber." Yeah, I had a good hearty laugh over it, too.

How about a little retro for your day? Not that I'm not loving this springtime, but when I saw this photo of an orange cream float on Beth Helmstetter's blog, I could not resist a quick detour into summer. And, if you want to enjoy one of these treats without designing your entire wedding around it, here's a recipe from Country Living. (It really would make a cute party, though.)
So I'm sitting with my boss and our former intern, Alex, at a sushi restaurant when I found myself transfixed by the pile of crispy, wispy sweet potato straws resting atop their Amazing Roll. I had a vision: What if I put that on top of a burger?
From that moment on, I had a mission and it was to do just that. But what I didn't have was a know-how. Google searches for "sweet potato straws" or "fried sweet potato strands" didn't turn up munch and after trying about every grater or cutting tool in my kitchen, I still had no idea how to achieve that goal. (I just did a more specific search on Google and found that apparently I need a very fancy Mandolin slicer or a very cheap Julienne shredder.)
Finally, Sean said, "This is ridiculous, just make long strips with a vegetable peeler" and then he did just that.
My dream was dead, but it's okay, because at the end of the day, they'll still taste amazing. So I dipped the sweet potatoes in a quick 10-minute ice bath, then dried them with a paper towel before tossing them in vegetable oil, boiling at 350 degrees.
But that's a very edited version of what actually happened. What really happened was that I set the oil to boil while I was struggling with my various graters, absentmindedly forgot and was confused when I heard a persistent beeping coming from the hallway. Oh right! Something was burning.
We were trying to desperately air out the kitchen/dining area/living area when I realized, oh right, I'm burning a hamburger bun in the toaster. Multitasking fail, for reals!
But no sense crying over burning kitchens. I let the sweet potato strips boil for just a minute, until they looked like their chip form.
I then sprinkled them with salt and pepper, and let them dry on a paper towel.
And finally, achieved my dream of crispy sweet potatoes on my burger! We had some barbecue sauces left over from our rehearsal dinner, so I squirted a bit of that over melted cheddar, topped with the sweet potatoes and chowed down. The combo of flavors was SO GOOD, and I honestly think this could be on the menu of all my favorite burger joints.
P.S. I think crispy sweet potatoes could be a great alternate topping for anything you would typically top with fried onions. You could also bake them to avoid the stigma of having deep-fried something.

Apple and berry wreath What you'll need
1 12 inch straw wreath form Stem wire Floral wire Floral picks (4 inches) 35 small red delicious apples 1 bunch of red holly berries 1 bunch of red rose hips Trailing English ivy
Directions
Pierce apples through the center with the stem wire. Working from side to side on the front of the wreath, wrap wired apples around the form, twisting tightly in back to securely fasten each piece of fruit. Cover the entire wreath form with apples. Cut small bunches of berries and rose hips (about 2 3 inches in length). Wire the berries and rose hips to floral picks. Add the bunches to the wreath, interspersing the berries among the apples. Today's wedding board was inspired entirely by Silvana di Franco's photo of the red folding bistro chairs. The simplicity, the muted colors. Like yesterday's inspiration board, something about it feels like this early part of Spring - soft gray with glimpses of color. Used judiciously, red is one of my favorite colors. It has so many moods, from playful to sexy. Here, I think it's both sophisticated and sweet. For this couple, I imagine a low-key luncheon with just a few perfect details - personalized menus, a single peony instead of a bouquet, a getaway bicycle - and just their closest friends and family.

In other news, my wedding dress came today; it's beautiful and fits great, but of course, will need some tweaks. Sean's here, so I didn't get to gaze to the degree I'd like. Sounds like I know what I'm doing tomorrow.
Just stopping by to say this week has been crazy busy, full of meetings and interviews and dinners and movie nights, but more importantly, it has been catastrophic for the people of Haiti.

Gold and platinum are 15-19 times heavier than other streambed materials and concentrate in low pressure areas and cracks that run across rivers and streams. You look for a crack on the bank, and follow it out until you meet the "gold line" and there you suck it out with your dredge. Gold will be on the outside edge of a river gravel bar, at the head of the bar (large gold but usually beneath big boulders), and at the tail end of a bar (vast concentrations due to river bars forming in the shape of an airfoil and sucking fine gold to the tail end) but be small to microscopic at the tail end. Gold will travel down a river or stream in a line, usually off center of the high pressure water. Gold will settle behind a boulder. A good place to fish, can also be an excellent place to find gold. "Black sand" is iron ore that can be readilly identified in gravel bars and is a ready indicator that gold is probably present. The most effective and economical way for the average person to find paying concentrations of gold in a river or stream is with a simple ($80) sluice that you shovel into and the riffles retain gold, platinum, gems and anything heavy for you. Gold can be found up high on the old river channels and recovered with metal detectors, a gold wheel, a highbanker, or simply by identifying the material, shoveling it in your truck and working it out later in a wheel, or your simple stream sluice. The states which have gold in vast quantities are: Maine, Vermont, Virginia, North Carolina, South Carolina, Georgia, Alabama, Colorado, Wyoming, New Mexico, Nevada, Arizona, California, Idaho, Washington, Montana, and Oregon. The rest have gold as well, some in very good concentrations. All have gems of some kind that a sluice will seperate and hold. Good luck finding the gold of your dreams!
